Edge downloads files to the, well, folder for Downloads, oddly enough, but you may want to change that. If so, that's quite possible, but there's no easy option, and you've got to use a workaround instead.

The best way to counteract this is to go to Windows Update (in Settings > Update & Security), select Advanced Options, and then Notify Schedule Restart, which ensures that instead of interrupting whatever you are working on, the OS will request a reboot.
